Chickpea and Tomato Toss Salad |
Ingredients

* 1 can of chickpeas, drained (also called garbanzo beans)
* 1/4 C green onions, chopped
* 1 large tomato, chopped (Try lightly salting the chopped tomato pieces. It really makes the tomato taste burst.)
* 1 TBSP parsley, chopped
* 1 tsp. lemon juice
* 1 TBSP olive oil
* salt and pepper to taste (optional)

Directions

1. Place the chickpeas in a large salad bowl.
2. Place the green onions, tomato and parsley in the bowl.(I chop the parsley by putting it in a small glass and use scissors to cut it up.)
3. Toss thoroughly but gently to combine.
4. Sprinkle the lemon juice over the top of the salad. You don't need to measure if you don't want to. Just cut a lemon in half and squeeze (cut side up to catch the seeds) the lemon over the salad.
5. Sprinkle the olive oil over the salad as well.
6. Toss gently until completely coated with the juice and oil.

Chickpeas, also known as garbanzo beans, are a great source of protein. Try this salad served over a bed of fresh baby spinach for a complete meal. If you're on a low glycemic diet, this is a great quick lunch or dinner.
