Chili Corn Chip Pie

Ingredients

*1 lb. ground beef
*1 pkg. chili seasoning mix
*1 can diced tomatoes
*1 can kidney beans, drained and rinsed
*1 large bag of corn chips
*1 C Mexican cheese blend, shredded
*1 C sour cream
*optional: mix some cut up chives in sour cream

Directions

1. Crumble the beef into a skillet.
2. Position the skillet over medium heat on the stove.
3. Cook the meat 10 minutes or until browned through.
4. Drain the meat on a paper towel.
5. Return the drained meat to the skillet.
6. Sprinkle the chili seasoning over the meat.
7. Gently stir in the tomatoes and beans.
8. Continue stirring to combine all the ingredients together well.
9. Reduce the heat to low and cover the skillet tightly.
10. Cook 20 minutes or until completely heated through.
11. Place the corn chips into a pie plate.
12. Spread the meat mixture over the corn chips.
13. Sprinkle the cheese over the meat mixture while it's hot so the cheese melts a little.
14. Place the sour cream in dollops over the entire top of the pie just before serving.

Story

Sometimes a dish is so simple, and so unusual, that you just have to try it. That's what happened with this "corn chip pie". This is a "game day" dish if ever there was one. If your husband, kids, and friends are glued to the television watching a game or race, and you put this pie in front of them, I guarantee they will have to break away for a moment or two just to say "what the heck is that". Then they'll dig in and fall in love with it!
