Chilled Green Beans and Cauliflower Salad |
Ingredients

* 1 1/2 lbs green beans
* 1/2 head cauliflower, cut into small florets
* 1 C of water
* 1 onion, chopped
* 1 large clove garlic
* 1 tbsp lemon juice
* 1/4 C soy sauce
* 1/4 C water
* 1 tbsp sunflower oil
* 1 tbsp sesame seeds
* 8 large lettuce leaves

Directions

1. Snip the ends of green beans and break the beans in half.
2. Bring 1 Cup of water to a boil in a large saucepan over medium heat.
3. Add the onion, garlic, lemon juice, beans and cauliflower florets to the water.
4. Reduce the heat to low and simmer 8 minutes or until just tender.
5. Drain well and remove garlic.
6. Combine soy sauce, 1/4 Cup water and oil in a small bowl.
7. Pour the mixture over the vegetables tossing to coat.
8. Chill covered for at least 60 minutes.
9. Preset the oven to 325 degrees.
10. Spread the sesame seeds over a cookie sheet.
11. Toast the seeds, stirring occasionally for 5 minutes or until browned.
12. Sprinkle the seeds over the salad once it has chilled.
13. Serve the salad over a bed of the lettuce leaves.
