Chocolate Chip Pumpkin Truffles |
Ingredients

* 2 1/2 C vanilla wafer cookies, crushed
* 1 C toasted almonds, ground
* 1/2 C powdered sugar, sifted
* 2 tsp cinnamon
* 1 (6 oz.) pkg. semi sweet chocolate chips
* 1 C pumpkin puree
* 1/3 C coffee liqueur

Directions

1. In a large mixing bowl put the crushed cookies, ground almonds, powdered sugar, and cinnamon and toss all the ingredients to cover well.
2. Add chocolate chips and mix in well.
3. The pumpkin puree is folded in and the liqueur is poured over the top.
4. With your hands mix until all is combined together well.
5. The mixture is rolled into 1 inch balls using your hands.
6. On a baking sheet lined with parchment paper put the balls, spacing about 2 inches apart.
7. Chill in refrigerator at least 2 hours or until firm.

These are a great cookie, or candy, to make with kids. It's mixed and formed into balls with your hands, so that's very appealing to kids. The cookie balls are also not baked, so once they are formed, they just get popped in the refrigerator and chilled. You can have a whole kitchen full of kids and you don't have to worry about a hot oven or watching cookies so they don't burn.
I know what you're thinking though... the recipe calls for coffee liqueur. You can actually substitute plain coffee.
