Chunky Potato and Squash Salad

Ingredients

* 1/2 C mayonnaise
* 1/4 C sour cream
* 1/2 tsp salt
* 1/4 tsp pepper
* 1 lb new red potatoes, chopped into chunks
* 2 yellow squash, chopped into chunks
* 1 red onion, chopped
* 2 carrots, grated
* 3 stalks celery, chopped
* 1 TBSP parsley

Directions

1. Combine the mayonnaise, sour cream, salt and pepper in a small bowl.
2. Barely cover the potatoes with water in a large saucepan.
3. Bring the water to a boil over high heat then adjust the heat to low.
4. Cook 15 minutes or until the potatoes are tender.
5. Drain off all the water, cool slightly and place in a serving bowl.
6. Mix in the remaining vegetables and parsley.
7. Pour the mayonnaise mixture over the vegetables and blend until well coated.
