Cinnamon Raisin Apple Crisp |
Ingredients

* 2 tbsp brown sugar, firmly packed
* 1/2 tsp cinnamon
* 1/4 C raisins
* 1 or 2 apples (depending on size), cored, peeled and sliced (use your favorite variety)
* 3/4 C all purpose flour
* 3/4 C milk
* 4 eggs
* 2 tbsp butter, melted

Directions

1. Preheat oven to 350 degrees and spray a 9 inch pie plate with cooking spray.
2. In a large mixing bowl put the brown sugar and cinnamon and mix well.
3. Toss in the raisins and apple slices and stir to coat well.
4. Place the mixture into the prepared pie plate.
5. Bake 12 minutes in a 350 degree oven.
6. Take from oven and set aside while making the topping.
7. In another large mixing bowl put the flour, milk, eggs and butter and mix together with a rubber spatula until the flour is completely moistened.
8. Spread the mixture over the top of the apple raisin mixture.
9. Bake in a 450 degree oven 15 minutes or until the top is a golden brown.

I like to use a nice tart apple variety to make this dish because the brown sugar and cinnamon make it plenty sweet. The topping is very rich - 4 eggs will do that!
The only downside to this dessert is that it takes so little time to cook that you won't have the aroma of baking apples and cinnamon wafting through the house for nearly long enough. Enjoy!
