Classic Herb Roasted Potatoes

Ingredients

* 4 russet potatoes
* 3 tablespoons olive oil
* 1 medium onion, chopped
* 2 cloves garlic, minced
* 1 teaspoon dried basil leaves
* 1 teaspoon dried thyme leaves

Directions

1. Preheat oven to 400. Cut potatoes into 1" pieces.
2. Toss potatoes with olive oil, onions, garlic, basil and thyme in a roasting pan.
3. Bake for 50-55 minutes, stirring a couple times.

The next time you plan a meat and potatoes dinner, choose these potatoes. What a nice treat, and change, from your regular mashed or baked potatoes. The basil and thyme adds a real kick to the potatoes, not to mention the garlic! You simply can't go wrong with these oven roasted potatoes.
