Coconut Rice Pudding

Ingredients

* 1/2 cup rice
* 1 cup milk
* 1/2 cup water
* 1 cup coconut milk
* 1/2 teaspoon vanilla
* 1 tablespoon sugar
* 1 tablespoon butter

Directions

Place rice, milk, coconut milk, water and vanilla in saucepan. Bring to boil. Reduce and simmer 15 to 20 minutes. Stir often to prevent sticking.

Add sugar. Mix well and cook for about 1 to 2 more minutes.

Serve topped with tropical fruit (mangos, papaya, etc.)
