Coleslaw Rueben Sandwich |
Ingredients

*1 C coleslaw mix, chopped fine (or use Angel Hair style shredded cabbage)
*1/2 C Thousand Island dressing
*1 tsp Dijon mustard
*2 TBSP of margarine
*8 slices rye bread
*4 oz. cooked ham, sliced thin
*4 oz. Swiss cheese, sliced thin

Directions

1.Stir together the coleslaw mix, dressing, and mustard until well blended.
2.Put a slice of ham, a slice of cheese, and a layer of coleslaw on 4 slices of bread.
3.Top each with the second slice of bread.
4.Spread butter on the bread before putting in hot skillet.
5.Grill the sandwiches in a heated skillet for 2 or 3 minutes, turn, and grill for 2 or 3 minutes more until browned on both sides.

If you're not a big fan of sauerkraut, this is a good recipe to try so you can enjoy a Reuben sandwich. It has all the basic ingredients that make a Reuben good - ham, Swiss cheese, rye bread, and Thousand Island Dressing. By simply replacing the sauerkraut with it's non-fermented beginnings, cabbage, you can enjoy all the same great flavors. Pour yourself a cold mug of beer and enjoy!
