Corn Beef and Kraut Oven Baked Dip |
Ingredients

* 1/4 lb. deli corned beef, chopped
* 1 1/2 C Swiss cheese, shredded and divided
* 1/2 C Thousand Island dressing
* 1 (8 oz) pkg. cream cheese, room temperature
* 1/2 C sauerkraut, drained well
* "cocktail rye" bread, or any dark, bread or cracker.

Directions

1. In a mixing bowl put the chopped corn beef and sprinkle in 1 C of the Swiss cheese.
2. Add the cream cheese and Thousand Island dressing and mix until the cream cheese becomes very creamy and smooth.
3. Set the oven temperature to 400 degrees.
4. In a 9 in pie plate spread the corned beef mixture.
5. Spread the sauerkraut over the top.
6. Cover the top completely with the remaining Swiss cheese.
7. Put in the oven and bake 12 minutes or until bubbly around the edges.
8. Serve with "cocktail rye" bread, or chunks of any hearty, dark break or cracker.

Appetizer or meal? I'm not sure which I would consider this. I do know that if you sit down with a pile of cocktail rye bread, a couple bottles of beer, and your favorite people, you'll finish this off in no time and walk away from the table full and satisfied!
