Cranberry Orange Stuffed Apples |
Ingredients
|
* 1/3 C canned whole cranberry sauce
* 1/4 tsp orange zest
* 1/8 tsp nutmeg
* 3/4 C water
* 1/2 C orange juice
* 1/3 C sugar
* 2 Golden Delicious apples, peeled, cored and cut in half lengthwise

Directions

1. Dump the cranberry sauce into a mixing bowl.
2. Stir in the orange zest and nutmeg.
3. In a saucepan over medium heat pour the water and orange juice.
4. Add the sugar and stir to combine.
5. Simmered 4 minutes or until the sugar is completely dissolved, stirring often.
6. Hollow out the center of each apple half.
7. Place the prepared apples into the orange juice mixture.
8. Cover and cook on low heat for 20 minutes or until apples are fork tender.
9. Remove the apples with a slotted spoon and drain them well.
10. Fill the center of the apples with the cranberry sauce mixture and serve.

What a great combination of flavors! Mixing the tartness of the cranberries with the sweet apples and zest of the orange makes for one delicious apple treat! Have some vanilla ice cream or whipped topping on hand and serve these apples while they're still warm. A very nice alternative to apple pie this holiday season.
