Cranberry Relish Salad

Ingredients

*4 cups frozen cranberries
*2 C sugar
*1/2 C. orange juice
*1/2 C. cranberry juice
*1 tbs. orange zest (chop finely)
*1/4-tsp. salt

You can also add walnuts or pecans if you'd like.

Directions

1. Combine all ingredients in a large pot.
2. Place the pot over medium heat
3. Bring to a boil.
4. Continue to until the cranberries burst open (10 minutes)
5. Remove the pot from heat
6. Transfer to a bowl
7. Refrigerate
8. Cover tightly
9. Keep refrigerated until needed

Story

The relish will last in the refrigerator for up to 2 months. Cranberry relish is not just for the holidays but can add a nice touch to everyday meals – it just makes everyday meals a little special.
