Creamy Chocolate Raspberry Truffles

Ingredients

*20 squares semi sweet baking chocolate, divided
*1 (8 oz) pkg. cream cheese, room temperature
*2 tsp raspberry extract

Directions

1. Melt 8 squares of the baking chocolate according to package directions.
2. Place the cream cheese into a large mixing bowl.
3. Beat on medium speed until smooth and creamy.
4. Add the chocolate to the cream cheese.
5. Pour the extract into the mixture.
6. Beat until the ingredients are combined well about 1 minute.
7. Cover and chill 1 hour or until easy to handle
8. Shape the firmed mixture into balls.
9. Place the balls on wax paper.
10. Melt the remaining chocolate as directed on the package.
11. Dip the balls into the chocolate and cover completely.
12. Place the truffles back on the wax paper.
13. Allow to cool just enough to handle.

Raspberry and chocolate is a flavor pairing that's simply magic. These little truffles are so easy to make, your family will want a repeat performance every night! You may have to hold them off a bit, though, just to keep these treats from becoming ordinary. Spoil the family a little, but not too much.
