Creamy Sweet Pea Bacon Topped Salad |
Ingredients

* 10 oz package frozen peas, thawed & well drained
* 1/2 cup celery, chopped
* 1/4 cup onion, chopped
* 1/8 cup peanuts, chopped
* 1/2 cup sour cream
* 3 slices bacon, cooked and crumbled
* salt and pepper to taste

Directions

1. Combine peas, celery, onion, peanuts, and sour cream in a serving bowl, mixing together until well blended.
2. Sprinkle bacon on top.
3. Season with salt and pepper to taste.
4. Serve immediately.

Sweet peas and bacon are a surprisingly wonderful flavor combination. This salad makes a nice side dish or can be served for lunch with just a piece of crunchy bread alongside.
You don't cook the peas in this recipe which keeps them nice and firm. Just be sure to let them thaw in a colander so they drain well. You can run cold water over them to remove the ice quickly and thaw them faster. Just don't run hot water over them as they will cook slightly, and you don't want that.
