Creamy Whipped Cauliflower |
Ingredients

* 1 head cauliflower, broken into florets
* 1 cup chicken broth
* 3 tablespoons sour cream
* 1 tablespoon butter, softened
* 1/2 teaspoon salt
* 1/4 teaspoon pepper

Directions

1. Put cauliflower and broth into a large saucepan and bring to a boil.
2. Turn heat down to simmer and cook about 10 to 12 minutes, or until cauliflower is tender.
3. Drain cauliflower into colander over bowl to capture the broth.
4. Put cauliflower and 2 Tablespoons of the saved broth into a food processor and pulse until smooth.
5. Add sour cream and butter and pulse again for just 4 or 5 seconds until blended together.
6. Scoop out into a serving bowl, sprinkle salt and pepper on top and serve.

Story

Cooking the cauliflower in chicken broth really adds a lot of flavor to this vegetable side dish. We've actually made this whipped cauliflower dish to replace potatoes for some meals. It's very tasty and kids love it!
