My kitchen has a nice collection of Creole seasonings, all sorts to choose from. If you don't have a Creole seasoning on hand, the blend is pretty simple.
You'll want a mixture of: equal parts, Kosher salt, black pepper, dried onion. Then 1/2 that amount each of parika. Then about 1/3 to 1/2 that amount of garlic powder. Then 1/2 that amount each of cayenne and chili powder. Then 1/2 that amount each of dried thyme and dried oregano. Stir them all together and put in an air tight container for storage.
This mix will give you a pretty standard Creole seasoning, but just tweak it as you like to suit your taste. Enjoy!
