Crescent City Black Bean Andouille Soup - Crock Pot |
Ingredients

* 2 cans (15 oz size) black beans, drained and rinsed
* 2 andouille sausages, bite size cut
* 1 can (15 oz) fire roasted diced tomatoes with garlic
* 4 cups chicken broth
* salt and pepper to taste
* cooked rice - optional

Directions

1. Combine all ingredients in crockpot.
2. Set heat to Low and cook covered for 5 to 6 hours.
3. Serve with a spoon of rice in bowl if desired, or crusty bread slices.

Story

There really is no sausage that compares to Andouille sausage when it comes to Cajun cooking. You can substitute others, but your recipe won't turn out the same.
This soup is hearty as is, but I do like a scoop of rice in my bowl. You may want to skip the rice and just serve with 3 or 4 pieces of crusty bread set alongside the rim of the bowl. Very tasty!
