Crowd Pleasing Cheesy Spinach Appetizers |
Ingredients

* 2 (10 oz.) pkgs. chopped spinach, cooked and drained
* 2 cups herb stuffing, finely crushed
* 2 large onions, finely chopped
* 1 clove garlic, crushed or grated
* 6 eggs, beat slightly
* 3/4 cup melted butter
* 1/2 cup grated Parmesan cheese
* 1/2 tsp salt
* 1/2 tsp black pepper
* 1/2 tsp dried crushed thyme

Directions

1. In large bowl, mix all ingredients thoroughly.
2. Form into balls, about golf ball size. (Should make about 36-48 balls.)
3. Put on greased baking sheet and bake at 350 degrees for about 10 minutes or until firm, but not hard. Repeat for each baking sheet full. Don't overcrowd your baking sheet. Cool on rack covered with paper towels or paper grocery bags.
4. FREEZE AHEAD INSTRUCTIONS: Place uncooked balls on greased baking sheet and put in freezer. After frozen solid, remove from baking sheet and put desired quantities in plastic freezer bags until you're ready to use them. Remove desired quantity and bake frozen on greased baking sheet at 350 degrees for 20-25 minutes.

These are just fun to have in the freezer. It's amazing how good (and simple) they truly are! And a bonus if are feeding kids...they'll eat their spinach and love it. (You don't have to tell them about the spinach...)
