In just a few simple steps you can have a smooth, chocolatey mousse pie that rivals any that takes hours to prepare.
The easiest way I've found to melt chocolate is in a double boiler. If you don't have a double boiler, just put the chocolate in a small pot or bowl that fits inside a larger pot. Fill the larger pot with water and set smaller pot in, making sure NO water sneaks into the smaller pot with the chocolate. Put over medium heat and let the water just come to a slow boil, then shut heat off. Remove the pot with chocolate and stir, stir, stir until chocolate melts. That's it.
