Easy Cheesy Cauliflower Casserole |
Ingredients

* 1 head of cauliflower
* 1 tbsp lemon juice
* 2 tsp salt
* 1 C mayonnaise
* 1 1/2 tbsp of yellow mustard
* 1 tsp dry mustard
* 1 (4 oz.) pkg. sharp Cheddar cheese, shredded

Directions

1. In a saucepan over medium heat place the cauliflower with the flower side down.
2. Put just enough water to cover the cauliflower.
3. Pour the lemon juice and salt into the water and bring to a rapid boil.
4. Boil the cauliflower for 10 minutes.
5. Turn the cauliflower over and cook for an additional 10 minutes.
6. Remove the cauliflower from the water and drain well.
7. In a mixing bowl blend together the mayonnaise, yellow and dry mustard.
8. Lay the cauliflower, stem down, into a glass baking dish.
9. Pour the mustard sauce over the cauliflower head.
10. Sprinkle the top with the cheese.
11. Bake in a 375 degree preheated oven for 10 minutes or until the cheese melts.

This is the perfect vegetable dish for a special family meal, like Thanksgiving, Christmas, or any holiday. Kids love it because it's cheesy and it gets high marks with the grown ups in my house, too, because it's not bland. Very very colorful as well!
