Easy Chicken Veggie & Rice Layered Casserole

Ingredients

* 2 cups rice, uncooked
* 3 lbs. cooked chicken, diced or shredded
* 2 (16 oz) bags frozen stir fry vegetables
* 1 can cream of mushroom soup
* 1 can cream of chicken soup
* 1 cup milk
* 2 soup cans water
* salt and pepper to taste

Directions

1) Preheat oven to 350 degrees.
2) In bowl, whisk together the two soups with the milk and the two soup cans of water.
3) In large casserole dish, layer 1/2 rice, 1/2 chicken, 1/2 veggies, 1/2 soup mixture, then repeat layers.
4) Bake covered at 350 degrees for 45 minutes, then remove cover and continue cooking for 45 more minutes or more, making sure that the rice is fully cooked.

This is one of those meals that, if you keep all the ingredients on hand, you can throw it together with hardly a thought! When your family is extra hungry and you don't want to bother with a lot of chopping and prep work, this recipe is the one to turn to.
