Easy Guacamole With Tomato |
Ingredients

* 4 Roma tomatoes, seeds removed and diced small
* 1/2 medium sweet onion, diced small
* dash red pepper flakes
* sea salt and pepper to taste
* 1 lime, zested and juiced
* 5 ripe avocados, seed removed, peeled, then diced small
* 1 Tbsp fresh cilantro, chopped fine

Directions

1. In a large glass bowl, put the tomatoes, onion, pepper flakes, sea salt, pepper, and lime zest and juice. Stir, then gently toss in the avocado and cilantro to combine.
2. Serve with tortilla chips, crusty bread, or as a side dish.

If you can make this ahead of time, you will give the flavors a chance to blend a bit more. However, if you serve it immediately after mixing, it still tastes great.
Be sure to use Roma tomatoes as they have less liquid than other tomatoes. This keeps the guacamole from getting watery and the tomatoes actually have a more intense flavor.
If you refrigerate the guacamole, be sure to let it come back to room temperature before serving to allow the flavor of the avocado to emerge.
