Way Too Easy Ranch Chicken |
Ingredients

* 3 split chicken breasts, skinless, bone-in
* 1 cup Ranch style salad dressing
* 2 cups instant potato flakes (watch the ingredients for "real" potato flakes)

Directions

1. Preheat oven to 350.
2. Spray a baking sheet with non-stick spray.
2. Smear the Ranch dressing on the chicken breasts, then sprinkle them with the potato flakes to coat thoroughly.
4. Place on baking sheet and bake for 25-30 minutes or until chicken is cooked through and no pink remains.

This is such a simple recipe it shouldn't even be called a recipe. But, I know it's surprisingly good. Kids always love Ranch dressing and the potato flakes really add something interesting.
You'll notice I used split chicken breasts with the bone in. It's really a money saver and it doesn't make a bit of difference in the cooking of this recipe. Actually, I prefer the bone-in breasts for a lot of the recipes I use because the chicken holds together a little better and it's a bit more flavorful. Try it.
