Fruit and Orange Bran Muffins |
Ingredients

* 2 C oat bran
* 1/4 C sugar
* 2 tsp. baking powder
* 1/4 tsp. baking soda
* 1/2 C nonfat or low-fat vanilla yogurt
* 1/2 C orange juice
* 1/2 C fat-free egg substitute (may substitute 2 eggs)
* 2 TBSP canola or walnut oil
* 3/4 C fresh or frozen blueberries or raspberries, unthawed

Directions

1. Bring the oven temperature to 350 degrees.
2. Spray a muffin tin lightly with a non stick cooking spray or insert paper muffin cups.
3. Place the oat bran in a large mixing bowl.
4. Add the sugar, baking powder and baking soda and mix well to completely combine.
5. In a different bowl combine together the yogurt, OJ, egg and oil using a rubber spatula to mix the ingredients together.
6. Fold the yogurt mixture into the oat mixture with the rubber spatula being sure everything is combined together well.
7. Carefully fold in the fruit.
8. Fill each muffin cup 2/3 full of the batter.
9. Bake 12 minutes or until a golden brown on top.

I love a versatile muffin recipe. This one can be made with egg substitute if you wish. Also, vary the fruit when you make it. It's great to have something healthy to do with your blueberries and raspberries, even though topping them with ice cream isn't so bad, is it? Try this muffin though. It's moist and fruity and it's one way to get your whole family to eat bran.
