Granny Apple Salad with Beets |
Ingredients

* 4 Granny Smith apples, peeled, cored and sliced
* 1 (16 oz.) can julienne beets, drained very well
* 1/2 C radishes, sliced
* 1/4 C green onions, sliced
* 1/4 C vinegar
* 1/4 C olive oil
* 1 tsp sugar (more or less, or omit)
* 1/4 tsp salt
* 1/8 tsp pepper

Directions

1. Toss the apple slices, beets, radishes and onions together in a bowl.
2. Whisk together in a separate bowl the vinegar and olive oil.
3. Add the sugar, salt and pepper and mix together with a rubber spatula.
4. Pour the mixture over the apple mixture.
5. Cover tightly and refrigerate at least 2 hours
6. Just before serving gently toss together to incorporate the flavors once again.

This salad has a lot of color, flavor, and texture - all good things! You can serve it over a few leaves of romaine lettuce just to give it a pretty presentation. It really brightens up a meal, especially when the weather starts getting colder and the skies are gray.
I omit the sugar just because I don't need it. But, for kids it does add just enough sweetness to encourage them to eat it up. You could use a drizzle of honey, or even a sprinkle of brown sugar instead.
