Granny Smith Curried Pork - Crock Pot |
Ingredients

* 2 lbs pork stew meat, cubed
* 2 TBSP frying oil
* salt and pepper to taste
* 1 cup water
* 3 TBSP curry powder
* 1 Granny Smith apple, cut into 8 wedges
* 1 medium sweet onion, cut into 8 wedges
* hot cooked rice to serve

Directions

1. In skillet, brown pork stew meat in hot oil, then put pork in crock pot and season with salt and pepper.
2. Mix water and curry powder and pour into same skillet, stirring to combine and loosen bits in bottom.
3. Add apple and onion to crock pot and pour mixture from skillet over all.
4. Cover and cook on LOW for 7 to 9 hours or until pork is tender.
5. Serve over hot cooked rice.

This is one great flavor combination! Tart Granny Smith apples, sweet onion, and curry. YUM!
Also, if you think pork is too fatty to eat on your healthy diet, think again. Choose pork that is nice and white, and you've got a lean cut of meat. Trim off any excess fat and you and your diet are perfectly safe. The flavor of the pork is what counts here - pork and apple go together perfectly.
