Granny Smith's Garden Shrimp Cocktail |
Ingredients

* 1 lb fresh jumbo shrimp
* 2 Granny Smith apples, peeled, cored and diced
* 5 celery stalks, diced (pull off any strings)
* 2 carrots, peeled and diced
* juice of half a lemon
* 1/4 cup mayonnaise

Directions
|
1. Bring a large pot filled with water to a boil. Drop in the shrimp and when the water returns to a boil, remove pot from heat and quickly drain shrimp and lay out to cool to room temperature.
2. Get out your blender and put all the remaining ingredients in. Pulse and blend until you've created a pureed sauce consistency.
3. Serve pureed sauce as a dip with shrimp.

This is a nice change from your standard shrimp cocktail with the red sauce. I don't know about you but the idea of eating wonderful shrimp with ketchup and horseradish mixed together is not that appealing.
You can add just a touch of red pepper flakes for color and a little "bite". Sprinkle the flakes in after blending the sauce, mixing with a spoon.
