Grilled Chicken Fajita Dinner In A Pouch |
Ingredients

* 4 tsp Mexican seasoning powder
* 4 Tbsp lime juice
* 1 1/2 lbs chicken, diced small
* 2 bell peppers, diced small
* 2 onions, diced small
* tortillas, rice, or green salad for serving

Directions

1. Mix Mexican seasoning and lime juice together in a bowl, then add the chicken and bell peppers, and cover with plastic wrap, and refrigerate for 1 to 2 hours.
2. Cut 4 squares of heavy-duty aluminum foil and spoon mixture (including the liquid) into the center of each square, dividing ingredients equally.
3. Fold up to form pouches and seal edges tightly, leaving a bit of room for steaming and expansion within the pouch.
4. Put on grill set at medium-high and cook for 10 to 15 minutes, turning the pouches several times to cook evenly.
5. Open pouches carefully and dump contents into tortillas and top with sour cream or other toppings if you wish, then roll up. Or, you can dump the contents over rice or a green salad to serve.

This is a fun recipe that is easy to throw together. I've used a lot of different seasonings to make this, even leftover packets from carry-out. If you don't have Mexican seasoning around the house, just make a blend of cumin, cayenne, oregano, chili powder, and salt and black pepper.
If you're making this for kids who turn their nose up at onions, just skip the onions and put in some finely diced carrots, instead. Or, use any other vegetables your kids will like. This is a no-fuss no-muss recipe!
