Ham and Cheese Veggie Sandwich |
Ingredients

* 8 spears asparagus, trimmed
* 1 1/2 TBSP mayonnaise
* 1 TBSP fresh parsley, chopped fine
* 8 slices of low carb wheat bread
* 1/2 lb thin sliced deli ham
* 4 slices Fontana cheese
* 2 TBSP of unsalted butter

Directions

1. In a saucepan with water steam the asparagus over medium heat 4 minutes or until tender.
2. Drain off the water and cool.
3. Combine mayonnaise and parsley until well blended.
4. Spread the mixture on one side of the 8 slices of bread.
5. Split ham between 4 slices of bread and lay 2 or 3 asparagus pieces over.
6. Place a slice of cheese over and top with mayonnaise bread slice.
7. Place the butter in a skillet over medium heat.
8. When the butter has melted grill the sandwich for 4 minutes then flip.
9. Continue grilling 3 additional minutes or until browned and the cheese has melted.
