Ham and Kidney Bean Savory Soup |
Ingredients

* 2 tablespoons vegetable oil
* 1 cup cubed cooked ham
* 1/2 cup chopped onion
* 2 garlic cloves, minced
* 1/2 teaspoon dried oregano
* 1/4 teaspoon dried thyme
* 3 cups water
* 14 oz can whole tomatoes, not drained
* 1 tablespoon Worcestershire sauce
* 1/4 teaspoon pepper
* 2/3 cup egg noodles, broken into chunks, not cooked
* 15 oz can kidney beans, not drained
* grated Parmesan cheese

Directions

1. Cook ham, onion, garlic, oregano and thyme in hot oil in a large soup pot. Cook until onion in translucent, stirring often.
2. Stir in water, tomatoes, worcestershire sauce and pepper. Bring to a boil then add the noodles and kidney beans and bring to a boil again.
3. Cover and simmer for about 5-10 minutes or until noodles are tender; stir often.
4. Serve sprinkled with cheese.

Yummy! Ham with lots of garlic and tangy Worcestershire sauce make this bean soup stand out from the rest. When you make a ham and bean soup it doesn't always have to be real heavy and thick. I like the extra little nod to the herbs in this soup, as well as the surprising addition of egg noodles. Be sure to grate some Parmesan cheese on top of each serving for an nice touch.
