Ham & Swiss Cheese Stuffed Pork Loin |
Ingredients

*1 tbsp of flour
*1/4 tsp lemon pepper
*2 tbsp butter, melted
*2 tbsp heavy whipping cream
*1 C of Swiss cheese, shredded
*1 (2 lb.) boneless pork loin
*6 oz. deli ham, sliced thin
*1 tsp paprika
*1/2 tsp dried marjoram
*1/2 tsp dried oregano
*1/2 tsp dried basil

Directions

1. Mix the flour, lemon pepper, butter, cream and cheese together until smooth.
2. Cut the loin in half down the center, lay open and cover with plastic wrap.
3. Pound the loin until flat then remove the plastic wrap.
4. Lay the ham slices then the cheese mixture over the meat and roll the meat closed and tie with kitchen string.
5. Mix the seasoning together and sprinkle over the meat.
6. Roast in a preheated 325 degree oven for 1 1/2 hours then let stand 10 minutes before slicing.

This is probably one of the craziest "pinwheels" you'll ever make. Once the loin is stuffed and rolled, you bake it as usual. Then, when you cut the pieces, you see the melty cheese and ham inside. It sounds crazy, but it works and it's just as tasty as you can imagine!
