Heart Healthy Hash Brown Omelet |
Ingredients
|
* 1 onion, chopped
* 1/2 C green bell pepper, chopped
* 1 3/4 C frozen hash browns, thawed
* 2 C egg substitute
* 1/4 C of water
* 1/8 tsp black pepper
* 3 slices of low-fat cheese

Directions

1. Spray a skillet well with a non stick cooking spray and place over medium heat.
2. Add the onions and green peppers and sauté for 5 minutes or until tender.
3. Stir in the potatoes and cook 5 minutes longer.
4. Place the egg substitute, water, and black pepper into a bowl and whisk until well blended.
5. Pour the mixture over the onions and green bell peppers.
6. Cook 5 minutes, and as the eggs set, lift the edges so the uncooked egg runs underneath and can set.
7. Lay the slices of cheese onto one half of the cooked egg and fold the egg over the top of the cheese.
8. Cook the omelet 1 minute longer or until the cheese melts.
Makes 4 servings

You can add anything healthy you like to this omelet, once you learn the basic recipe and method. For example, for something a little different add chopped tomatoes into the egg mixture before pouring it into the skillet.
An option in case you don't want to use an egg substitute, but still keep this omelet low in cholesterol, is to use just the egg whites and cook in the same way.
