Jalapeno Jack Rice Bake |
Ingredients

* 3 cups cooked rice
* 1 1/2 cups sour cream
* 1/2 cup milk
* 2 eggs, beaten
* 4 oz can jalapenos, not drained
* 1 1/2 cups shredded Monterrey Jack cheese
* 1/2 cup shredded Monterrey Jack cheese for topping

Directions

1. Combine first 6 ingredients in a bowl.
2. Transfer to a baking dish that's been sprayed with non-stick cooking spray
3. Top with remaining cheese and bake at 350 for 45 minutes or until cheese is bubbly and starting to brown a bit.

This is a nice way to add a bit of life to a simple rice side dish. Monterrey Jack cheese and jalapenos work very well together. Even kids who claim they don't like spicy food will find once you smother it in cheese, it's okay by them!
