Jamaican Jerk Coleslaw |
Ingredients

* 4 cups shredded cabbage
* 1/4 cup shredded carrots
* 1/2 cup chopped walnuts
* 1/2 cup mayonnaise
* 1 teaspoon sugar
* 1 tablespoon apple cider vinegar
* 1 tablespoon dry jerk seasoning

Directions

1. Toss the first three ingredients together in a serving bowl.
2. In a separate bowl, whisk together the remaining ingredients to create the dressing.
3. Pour the dressing onto the cabbage mixture and mix well.
4. Cover and refrigerate 1 hour before serving.

This is a nice change from the standard coleslaw/mayonnaise recipe. The jerk seasoning adds some really wonderful spice to this crispy salad. Experiment a little with the ingredients. Because you've got the flavors of The Island, consider adding a little chunked pineapple and some diced sweet red bell pepper.
