Junk Cake |

Ingredients
|
* 3 cups of flour
* 2 cups of sugar
* 1 tsp of salt
* 1 tsp of baking soda
* 1 tsp of cinnamon
* 3 eggs
* 1 1/2 cups of vegetable oil
* 1 tsp of almond extract
* 2 cups of ripe mashed bananas
* 1 can (8 oz) of crushed pineapple
* 1 cup of chopped almonds

Directions

1. Mix dry ingredients
2. In a separate bowl, beat eggs, oil and extract
3. Add bananas, pineapple & almonds and combine
4. Add to dry ingredients. Mix well, do not beat
5. Spoon into well oiled 10" tube pan
6. Bake at 350 for 1 hour, 25 minutes
7. Let cool at least 15 mins. Invert onto plate
8. When completely cooled dust with powdered sugar

This cake was always waiting for us whenever we headed to visit our family in MD.
A dense, moist, flavorful cake with fruit and nuts, just a thin slice will satisfy, although there is plenty left for seconds.
