Just in Time for Spring Shrimp Salad

Ingredients

* 1(15 oz.) can black beans
* 1 green bell pepper, chopped
* 1/2 C celery, chopped
* 1/2 C onion, chopped
* 2 TBSP cilantro, chopped
* 2/3 C salsa
* 1/4 C lime juice
* 1 TBSP vegetable oil
* 2 TBSP honey
* 1 lb. shrimp, peeled and cooked
* Lettuce

Directions

1. Place the black beans in a large mixing bowl.
2. Add the bell pepper, celery and onion.
3. Sprinkle with the cilantro and mix together well.
4. Fold in the salsa.
5. Pour in the lime juice, oil and the honey.
6. Mix all the ingredients together being sure they are combined together well.
7. Cover the bowl and refrigerate at least 8 hours.
8. When ready to serve, carefully fold in the shrimp.
9. Place the lettuce leaves on a plate.
10. Top with the shrimp mixture and serve cold.
