Kid Approved Chicken Vegetable Casserole with Stuffing |

Ingredients

* 1 package (6 oz) Stove Top Stuffing Mix for Chicken, prepared per package directions
* 1 1/2 lbs boneless, skinless chicken breasts, cut into 1" pieces
* 1 can (10 3/4 oz) condensed cream of chicken soup (you can substitute cream of mushroom or other "cream of" soup if necessary)
* 1/3 cup Sour Cream
* 1 bag (16 oz) frozen mixed vegetables, any vegetable or combination you like, thawed and drained (there will be too much water in this dish if you use your vegetables still frozen)

Directions

1. Preheat oven to 400.
2. Prepare Stove Top Stuffing Mix per package directions. Set aside.
3. In a large bowl mix together the chicken, soup, sour cream and vegetables. Be sure it's mixed thoroughly.
4. Spoon mixture into a lightly greased 9x13 baking dish(or similar size casserole).
4. Spread prepared stuffing evenly on top of chicken mixture.
5. Bake uncovered for 30 - 35 minutes or until bubbling hot and stuffing starts to brown a little on top.

When I need something that even fussy kids are guaranteed to eat, I use this one. You can really mix-up the ingredients a lot and find something that every kid will like. My grandkids LOVE broccoli (of all things) so I make this with just frozen broccoli and it's a hit. And I don't know a kid who won't eat Stove Top Stuffing, so this dish really is the answer.
