Lemon Dill Rice In Minutes |
Ingredients

* 1 tablespoon olive oil
* 1/2 cup diced onion
* 1 3/4 cup chicken broth
* 2 cups minute rice, not cooked
* 1 tablespoon dill weed
* 1 teaspoon lemon zest

Directions

1. Put olive oil and onion in large saucepan over medium high heat and saute onion until translucent. 2. Pour in the chicken broth and heat to a boil.
3. Stir in rice and return to boil.
4. Turn heat down to low, cover and simmer for 5 minutes.
2. When rice is done cooking, stir in dill weed and lemon zest with a fork, fluffing the rice. Serve hot.

This dish is simple and just a nice way to dress up plain rice. Serve this rice dish alongside any baked or grilled fish. Be sure to use lemon and dill on the fish (either as a marinade, sauce, or garnish) to mimic the flavors in the rice.
For a vegetable, choose either asparagus or broccoli with a lemon sauce or just tossed in a garlic and lemon butter.
