Lemon Dressed Cannellini Bean Salad |
Ingredients

*4 tbsp olive oil
*Juice of 1/2 lemon
*Salt and pepper to taste
*1 (14 oz) can of cannellini beans, drained
*1 small red onion, thinly sliced
*3 tbsp fresh parsley, chopped
*1/4 cup chopped black olives
*2 hard-boiled eggs, chopped

Directions

1. In a bowl whisk together the oil and lemon juice then add salt and pepper to taste and whisk again.
2. Place the beans, onion, and parsley into a salad bowl and toss to combine.
3. Pour the dressing over the top and toss to coat well.
4. Top the salad with the olives and eggs before serving.

This is a simple salad that tastes great and is perfect to bring to a picnic or potluck. It tastes refreshing and you don't have to worry like you do with a mayonnaise salad in the heat. However, if you are serving it outdoors in the hot weather, keep on ice or in a cooler and be sure to keep the eggs very cold.
