Lemon Laced Roasted Potatoes |
Ingredients

*2 lbs medium potatoes, peeled
*Juice from one lemon
*1/2 tsp salt
*1/4 tsp pepper
*6 tbsp of butter
*1/2 cup of hot water
*preheat oven to 375 degrees

Directions
|
1. Cut the potatoes into quarters and place them in a baking pan.
2. Sprinkle the potatoes with the lemon juice, salt and pepper.
3. Dot the top of the potatoes with the butter then pour the hot water over the top.
4. Bake in a preheated 375 degree oven for 1 to 1-1/2 hours or until tender.

Simply delicious potatoes you can walk away from! I love roasting potatoes because you don't have to watch a pot of water and worry about over boiling the potatoes. This is a simple method of cooking classic potatoes in the oven - you can even smash them if you want when they're done cooking. These are not supposed to be your "crispy fries" or anything like that.
