Lemon Roasted Brussels Sprouts |
Ingredients

*1 tbsp olive oil
*2 tsp garlic, minced
*1/2 tsp salt
*1/4 tsp pepper
*3 (10 oz.) pkg. Brussels sprouts, halved
*1 tsp lemon zest
*1 tsp lemon juice

Directions

1. Preheat the oven to 475 degrees and line a baking sheet with foil coated with cooking spray.
2. Whisk the oil, garlic, salt and pepper together and pour over the Brussels sprouts.
3. Spread the Brussels sprouts out evenly on the baking sheet and bake 15 to 20 minutes.
4. Put hot Brussels sprouts in a serving bowl, stir in the lemon zest and juice and toss to coat.

Brussels sprouts get a bad reputation mostly because they aren't cooked properly; very often boiled until they are mushy and bitter. Roasting them brings out their sweet nutty flavor and tossing them with lemon is a great way to "brighten" the flavor. You may never boil Brussels sprouts again.
