Let Me Count The Ways I Love You Salad

Ingredients

*3 TBSP butter, room temperature
*2 TBSP sugar
*1 1/2 tsp cinnamon, divided
*1/2 tsp red pepper, divided
*4 slices whole wheat bread, remove the crust
*1/2 C canola oil
*2 green onions, chopped fine
*1/2 C raisins
*1/4 C apple cider
*2 TBSP apple cider vinegar
*1/2 tsp salt
*1/4 tsp pepper
*1 (10 oz) pkg. salad greens
*1 pear, cored and sliced thin
*1 apple, cored and sliced thin
*4 pieces of bacon, cooked crisp and crumbled
*1/4 C walnuts, toasted
*1/4 C Swiss cheese, shredded

Directions

1. Heat the oven to 400 degrees while preparing the bread.
2. Place the butter into a mixing bowl.
3. Cream in the sugar, 1 tsp of cinnamon and 1/4 t red pepper into the butter.
4. Butter each slice of bread with the mixture.
5. Place the bread on a baking sheet.
6. Bake 8 minutes, turning once, until crisp.
7. Pour the oil into a skillet.
8. Position the skillet over medium heat.
9. Add the green onions and cook 3 minutes stirring often.
10. Stir the raisins in with the green onions.
11. Pour the apple cider and vinegar into the skillet.
12. Sprinkle the salt, pepper, and remaining cinnamon and red pepper into the mixture.
13. Cook 5 minutes or until heated through.
14. Empty the bag of salad greens into a large bowl.
15. Add the pears and apple slices and toss to combine.
16. Pour the cooked dressing over the salad.
17. Crumble the bacon over the top.
18. Sprinkle the walnuts into the salad.
19. Add the cheese and toss to completely combine.
20. Cut the toasted bread into cubes.
21. Add to the top of the salad just before serving.
