Lowfat Roasted Squash and Potatoes

Ingredients

* 1 butternut squash (about a pound) peeled and cut into 1" cubes
* 3/4 lb red potatoes, cut into 1" cubes
* 1/2 medium red onion, cut into 1" pieces
* 1 tablespoon olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon pepper

Directions

1. Preheat oven to 375.
2. Put squash, potatoes and onion in baking pan.
3. Toss with oil.
4. Bake for 20 minutes.
5. Stir, then bake another 1/2 hour, until nicely browned.
6. Sprinkle with salt and pepper.
