Mango Avocado Shrimp Salad

Ingredients

Salad Dressing:
* 3 tablespoons lime juice
* 2 tablespoons vegetable oil
* 1 tablespoon sugar (more or less to taste)

Salad Ingredients:
* 1 lb peeled cooked shrimp
* 2 lbs mangoes, cubed
* 1 lb avocados, cubed
* 1/2 cup sliced green onion
* 2/3 cup chopped cilantro
* 1/2 teaspoon dried red chile flakes

Directions

1. Mix the lime juice, vegetable oil, and sugar in a big glass bowl whisking together until smooth. Add sugar about 1/2 tblsp first, taste, then add more as desired.
2. Toss salad ingredients in dressing and serve immediately.

Story

I never bought a mango until I made this recipe, and now I'm hooked. Especially the combination of shrimp and avocado with the mango... yum... Be sure to use all the lime juice this recipe calls for so you get that nice flavor that only lime juice can give you.
