Those butternut squash are so beautiful in the store. Then, I get them home and they decorate my kitchen counter for a week or more, waiting for me to come up with a recipe to cook them with... then I throw them out. No more! My family loves this recipe. Unlike the other recipes I've tried, the little bit of tanginess that the orange juice adds really gives this dish a lift. Of course, the maple syrup is a winner in my house any day. Try this squash as a side dish for a pork roast or pork chop meal. It really goes well.
