These carrots make the perfect side dish to go with a nice pork roast or oven-baked pork chops. Maple and pork are a perfect pair. I used to make candied carrots on top of the stove to go with most of my pork roasts, but this recipe really is special. The walnuts add such a nice texture, and I usually sprinkle a few extra chopped walnuts on top of each serving of carrots as I'm dishing up the plates.
