Marinaded Southwest Pork Chops |
Ingredients

* 2 lbs pork chops
* 2 garlic cloves, minced
* 1 Tbsp chili powder
* 1 tsp cumin
* 1/4 tsp cayenne pepper
* 3 Tbsp vegetable oil
* 1/4 tsp salt
* 1/8 tsp black pepper

Directions

1. Put all ingredients in a large zippered food bag, seal closed and shake gently to coat pork chops completely.
2. Put bag in refrigerator for 4 to 5 hours.
3. Cook pork by grilling according to your grill instructions; or over medium indirect heat for 15 minutes total, turning once during cooking time. You can baste the pork chops with marinade remaining in bag.
4. You may also broil these pork chops as you would with any other pork chop recipe. Put under broiler, about 6 inches away, and broil for 7 to 8 minutes on each side.

Rather than just using a spicy dry rub, this marinade really gives these pork chops a little extra flavor, and the oil keeps them moist while cooking. The recipe is a good 'jumping off' point for other pork chop dishes, too. You can use the same marinade for a pork tenderloin or a pork roast.
