Mexican Beef & Mac Soup With a Little Help |
Ingredients

* 1 lb lean ground beef
* 1 medium onion, chopped
* 5 cups water
* 15 oz can pinto beans, rinsed and drained
* 14 1/2 oz can diced tomatoes, not drained
* 7 oz can corn, drained
* 4 oz can chopped green chiles, drained
* 1/2 teaspoon ground mustard
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 1 box hamburger helper chili macaroni

Directions

1. Brown ground beef with onions. Add water, beans, tomatoes, corn, chiles, mustard, salt, pepper and the sauce mix from hamburger helper. Stir well. Heat to a boil, then reduce heat and simmer for 10 minutes.
2. Add macaroni, cover and simmer for another 10-12 minutes or until macaroni is done, stirring occasionally.

I never thought I'd be buying any prepackaged dinners again, but this is one time it is really worth it. And it's fun, too! This soup is fast and one that's guaranteed kid-friendly. I also think it's a perfect man-sized meal, too. Game day or race day is the perfect time to plop down in front of the TV with big steaming bowls of this soup, with a few beers, and cheer on your favorite team... or driver. Pass the Fritos, please!
