Mexican Lasagne |
Ingredients

* 1 pound ground beef
* 1/4 cup chopped onion
* 2 (14 1/2 oz each) cans diced tomatoes
* 1 can (3 oz) canned diced green chiles
* 1 cup sliced fresh mushrooms
* 2 2/3 cups canned pinto beans, drained
* 1 tablespoon chili powder
* 1 teaspoon cumin
* 8 corn tortillas, cut in 1 inch wide strips
* 2 cups shredded Cheddar cheese
* 1 cup sour cream
* chopped fresh cilantro

Directions

1. Preheat oven to 350.
2. Brown ground beef with onion. Drain fat. Stir in tomatoes, chiles, mushrooms, pinto beans, chili powder and cumin. Cook about 15 minutes, stirring occasionally.
3. Place a single layer of the tortilla strips in a baking dish. Put 1/3 of the beef mixture on top of tortillas, then 1/3 of the cheese. Repeat layers.
4. Bake for 1/2 hour.
5. Serve topped with sour cream and cilantro.

I don't know why it took me so long to figure this one out! Lasagna has always been one of my all time favorite dishes to make, for our family and guests. But, why not Mexican? Why not indeed! All the layers are there, but with a whole new attitude. What a surprise when your family cuts into their lasagna tonight and discover the spicy, sweet aromas of a Mexican fiesta!
