Mixed Dried Fruit Cookies |
Ingredients

* 3 C all purpose flour
* 5 tsp. baking powder
* 1 C sugar
* 1 C of butter
* 1 egg
* 1 C of milk
* 1/2 C of mixed dried fruit, chopped

Directions

1. Preset the oven temperature to 350 degrees.
2. Lightly grease a cookie sheet with oil.
3. In a large mixing bowl put the flour, baking powder and sugar and mix.
4. With a pastry blender mix in the butter until the mixture becomes crumbly.
5. Gently fold in the egg and milk.
6. Use an electric mixer on low speed and beat until completely combined.
7. Blend in the dried fruit with a wooden spoon.
8. Place a small amount of flour on a flat surface.
9. On the floured surface roll the dough out until is 1/2 inch thick.
10. Cut the dough into 2 inch circles with a cookie cutter or the open end of a glass.
11. Position the dough circles on the prepared cookie sheet.
12. Bake 12 minutes or until lightly browned.

You can actually choose any dried fruit you like for this cookie recipe, or you can use a mixed variety of dried fruit. I do like to make this recipe using just dried apricots because those are my favorite, but the family likes the variety of dried fruit. Either way, they are very yummy and are simple enough to make for those times you find out the night before that you need to bring a treat to school!
